Meet Letitia Edwards of Shawnee

Today we’d like to introduce you to Letitia Edwards.

Hi Letitia, we’d love for you to start by introducing yourself.
I’ve always had a passion for cooking. Growing up, I was the one who cooked most of the meals for my family. I didn’t like eating the same thing over and over, so I started looking up new recipes and studying all the tips and tricks that came with them. With each meal, my confidence grew. The more I cooked, the more I developed my own style and preferences. I wanted to be known as a good cook.

Fast forward to 2020 (yes, during COVID), I was cooking breakfast for my husband. He was on the phone when I handed him his plate, and he told the person on the other end, ‘I’ve got to go, I just got my plate from Letitia’s Kitchen.’ And just like that, Letitia’s Kitchen was born! My husband is also an entrepreneur, and he encouraged me to turn my passion into a business. I started by making plates for friends and family, and over time, it evolved into providing catering for events.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Absolutely not! Cooking for your family is one thing, but cooking for others is a whole different experience. There’s so much to figure out. For example, figuring out the best containers to use and how to properly transport food so it stays fresh and presentable. Pricing has also been a challenge. I never want to overcharge, but I also have to make sure I’m covering my costs and making a profit. Overall, it’s still a learning process, and I’m figuring it out as I go.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I’m an operating room registered nurse. My journey in healthcare started as a CNA, then I became a CMA, followed by an LPN, and eventually, I earned my RN. It wasn’t always a smooth road, but I made it! Over the years, I’ve had the opportunity to specialize in several areas, but I’ve found that I really enjoy working in the OR and in home health care.

One accomplishment I’m proud of is being awarded Nurse of the Month within my first year in home health. That recognition meant a lot to me because it showed that my hard work, dedication, and passion for patient care didn’t go unnoticed. I had a goal when I started nursing school that I wanted to be someone’s favorite nurse and I can proudly say I’ve accomplished that goal multiple times.

What matters most to you?
Jehovah God comes first in everything I do. I know that all of my blessings come from Him, and I can always count on Him to guide me and help me through any situation.

Family is also extremely important to me. I wouldn’t be the person I am today, or have accomplished the things I have, without their constant support. They’ve always been there for me.
