Blanca , it’s always a pleasure to learn from you and your journey. Let’s start with a bit of a warmup: What’s more important to you—intelligence, energy, or integrity?
The most important thing to us would have to be integrity. We have lived in a world where not everyone has access to receive a proper education. It could be for personal, or even physical reasons. For that matter intelligence doesn’t not matter because we like to connect with people through stories, traditions and experiences. Ones integrity is what defines them as a person. The person they are, the person they want to become and the person they will be. Growing up my mother Blanca Mayorga always showed her truest colors. She truly showed me the backgrounds anyone came from didn’t matter. It was their drive, their choices, and their ability to make something out of quite literally nothing. Growing up my mother Blanca has shown me where honesty and morals can take you. To live in peace and respect to the choice and actions we make. This itself has defined our food truck to what it is today. We have been transparent and honest with the community we have grown since we’ve opened. We truly believe our customers can feel the love and energy from the second we take their order to eating the last bite of their food. We couldn’t have been more blessed to be in the position we are in.

Here at Lupita’s tacos we are delighted to welcome everyone !
We are a family/women owned business. We offer authentic Mexican food! We have grilled steak, shredded chicken and our fan favorite our BIRRIA. Everything that goes behind being able to open is what I truly believe what makes us. The time and energy it takes for preparations before opening our windows to taking orders is what makes everyone feel good and confident that we’re there for the right reasons. Being able to open and offer a good bite to eat for lunch, a conversation one might have needed or even a quick drink break. We’re here for it all. Unless we have a long line infront of us ! We’re there for everyone and love to hear their stories, bad or good we celebrate the little things, always. Simply waking up in the morning is one of the biggest blessings. Having our own business is amazing and truly a privilege but all this also comes with its struggles and challenges. Seeing my mother Blanca Mayorga overcome the difficulties set infront of her only encourages that much more of a drive in me. She has shown me the rainbow after the storm, always. I truly believe every meal we serve, it is served with the love and care from my mom, to her parents and so forth. Generations of hard work, dedication and determination have molded our company to what it is today. It’s our customers who have supported us that have allowed us to be able to grow and continue.
Appreciate your sharing that. Let’s talk about your life, growing up and some of topics and learnings around that. Who taught you the most about work?
This question was for my mother,Blanca Mayorga
The person who has taught me the most about work was my mother. We lost my dad at a very young age and she became a window at the young age of her 30’s. Regardless of our circumstances and environment living in Mexico, my mother was able to work to provide food on our table. I am 1 of 6 children. She had her own way of pushing forward. With a small grill and tent she was able to provide me with the knowledge and drive to strive for another day. I would be the one to help my mother sell tacos back in Mexico. My mother always believed in feeding us first because what’s a business if one isn’t able to eat. Not once did my mother fail to feed and provide for us. Because of this I am where I am today with the help of god. Every single day I am reminded of the privilege and blessing it is to be able to serve everyone. It truly started with my mother, Sara Sandoval Gonzales who lives in our heart and memories as a beautiful, loving, and hard working mother and daughter.
Was there ever a time you almost gave up?
Before we were given the opportunity to open, we were wanting to set our open date in 2019. As well all know, Covid came ends of 2019 to 2020. We began to believe our plans would not be possible or be achievable since those times were very hard for everyone ! Seeing the world shut down, losing loved ones and having no contact with close family and friends was really hard for everyone. We had slowly came to terms with a heavy heart that we would not be able to open but we put that all on gods hands and strived for a better tomorrow. Thankfully during the ends of Covid our plans began to see the light and things became very clear. Our wants and desires for this truck came with struggles but we put our trust up above and knew what was meant for us would be ours. Thankfully looking forward to now we couldn’t be happier to be in the position we are in. This is all thanks to the our drive, hard work and of course ALL OF YOU ! Thank you !
I think our readers would appreciate hearing more about your values and what you think matters in life and career, etc. So our next question is along those lines. Is the public version of you the real you?
I would like to believe the public person is the real us. we have chosen to be open and transparent since day one, even if it wasn’t rainbows and sunshine. This also goes back to what we believe, our integrity. This has truly helped us grow our community and they know we are of them. We are regular people with struggles and desires for a better tomorrow ! If we weren’t honest with our selfs we couldn’t face our customers. We wouldn’t be able to sleep at night knowing we had double intentions or even selfish desires. As our dreams were able to become reality with the help of god and the support of our community .
Thank you so much for all of your openness so far. Maybe we can close with a future oriented question. What is the story you hope people tell about you when you’re gone?
That we did everything out of love. For example there was a Lupita’s tacos here in downtown Topeka that had the same name “Lupita’s tacos”. When we first opened we received lots of love from customers who believed we were the same company and the same family ! The amount of people who have shared what that restaurant meant to them. The family, the love and the memories that stayed with them even after they closed. With that said, we’d love to be a company who is remebered for what they provided, even if it wasn’t a meal but simply a feeling, a sense of belonging and purpose. We truly appreciate every single customer we’ve ever had and for that we are beyond grateful. We are so glad to be able to be here in the same lifetime as those infront of us. God has a plan for us, for everyone. We want to be remembered with peace, love and happiness. After all we wouldn’t be Lupita’s tacos without the remembrance of our beloved Guadalupe “Lupita” Cortes. The reason behind our name is in memory of my daughter, a sister and friend. I believe we are striving to be one of kind. One of one. She would’ve wanted that much. For us to be honest and to do things right.
