Today we’d like to introduce you to Codi Bates.
Hi Codi, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Bon Bon began in 2016 as a counter-service restaurant with an unconventional setup—our kitchen was built inside a converted truck parked behind the building. It was scrappy, creative, and full of heart. We are nestled in the Warehouse Arts District, surrounded by artists, makers, and a community that has wholeheartedly embraced our unconventional concept from the start.
The vision was to create a cozy, design-forward space where guests could enjoy playful, globally inspired comfort food, seasonal cocktails, and warm hospitality in a setting that felt like an extension of our home. Over time, Bon Bon evolved into a full-service restaurant and bar, but we’ve never lost that spirit of experimentation and charm that defined our early days.
The journey hasn’t been without challenges—from unpredictable weather on the patio to the industry-wide struggles of the pandemic—but we’ve always leaned on creativity, resilience, and a deep love for this community. Bon Bon has become a place where people gather to celebrate, unwind, and reconnect—with each other, with good food, and with the joy of dining out.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It definitely hasn’t been a smooth road—though I don’t think we ever expected it to be. Bon Bon was born out of a creative risk: launching a restaurant with a kitchen built inside a truck, limited indoor space, and a mostly outdoor dining experience in the unpredictable Midwest. From day one, we had to get scrappy—weathering literal storms, troubleshooting infrastructure on the fly, and figuring out how to create a seamless guest experience in a space that didn’t always cooperate.
Then came the pandemic, which tested every part of our operation and values. We had to constantly pivot—shifting service models, supporting our team through uncertainty, and redefining what hospitality looked like when people couldn’t gather the way they used to. Add in the rising costs of goods, ongoing staffing shortages, and changes in how people dine, and it’s clear the road’s been anything but straight.
But through every challenge, there’s been growth. Our team has shown incredible creativity and resilience. We’ve learned how to be more flexible, more intentional, and more rooted in our purpose. The struggles have shaped Bon Bon into what it is today: a place that’s not just about food and drink, but about creating a sense of belonging, no matter what’s happening outside our doors.
As you know, we’re big fans of Bon Bon. For our readers who might not be as familiar what can you tell them about the brand?
Bon Bon is a neighborhood restaurant and cocktail bar tucked into the heart of Lawrence’s Warehouse Arts District. We specialize in playful, globally inspired comfort food, a seasonally driven cocktail program, and an atmosphere that balances laid-back charm with thoughtful design.
What sets Bon Bon apart is the way we approach hospitality—with intention, creativity, and a little bit of whimsy. Our menus change regularly and are often inspired by nostalgia, travel, pop culture, and personal stories. We’re known for our inventive cocktails, warm service, and one of the most beloved patios in town. Whether you’re here for a casual dinner, a celebratory date night, or just a great drink after an art opening next door, we want the experience to feel memorable and transportive.
Brand-wise, we’re most proud of the fact that Bon Bon feels like us. It reflects our values—community, collaboration, and care. We’ve stayed independent, nimble, and creative, even when it would’ve been easier to play it safe. The details matter to us—from the soundtrack to the glassware to the way a dish is plated. We see hospitality as a form of storytelling, and every service is a chance to tell that story a little differently.
For readers who haven’t visited yet: Bon Bon is a hidden gem in every sense. We invite you to come as you are, try something new, and settle into a space that was built with a lot of love. Whether it’s a curated cocktail, a seasonal dish you didn’t expect, or just a beautiful evening on the patio, we want you to leave feeling nourished and inspired.
Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
So many people have played a role in Bon Bon’s success—it’s never been a solo effort. First and foremost, our team. The chefs, bartenders, servers, and support staff who have poured their energy, creativity, and heart into this space over the years are truly the soul of Bon Bon. They’ve weathered the highs and lows, brought bold ideas to life, and created the kind of hospitality that keeps people coming back.
My husband, business partner, and Bon Bon’s Executive Chef, Simon, has been a constant collaborator. His culinary vision and calm presence have helped shape the direction of Bon Bon from day one. We’ve built this business side by side—learning as we go, challenging and encouraging each other, and staying rooted in our shared values.
We’ve also been deeply supported by the Lawrence community—from our neighbors in the Warehouse Arts District to the loyal guests who’ve been with us since the beginning. The local artist community, in particular, has helped shape the vibe and identity of Bon Bon in ways we’re endlessly grateful for.
On a broader level, I’ve had the privilege of connecting with mentors and peers through the James Beard Foundation’s Women’s Entrepreneurial Leadership program, the Independent Restaurant Coalition, and the Lawrence Restaurant Association. These networks have been invaluable—spaces where fellow business owners share wisdom, lift each other up, and remind us we’re not in this alone.
It truly takes a village to run a restaurant—especially one that dares to be a little different. I’m grateful every day for the people who’ve believed in Bon Bon and helped shape it into what it is today.
