Today we’d like to introduce you to Kenichi Ota.
Hi Kenichi, please kick things off for us with an introduction to yourself and your story.
Before opening KC Craft Ramen, I spent six years as a consultant helping people across the country launch their own ramen shops. I watched client after client succeed using the systems and knowledge I gave them, until I found myself asking a bigger question: what would happen if I poured everything I had into running a shop myself? When I decided to open one, I knew it couldn’t just be another ramen shop — I wanted to build something special, a place that would become the number one ramen destination its community loved for years to come.
I was originally based in Los Angeles, but LA already had no shortage of ramen shops, and I felt that opening one there would take a long time to become that beloved, number one spot in the community. So I searched all across the United States for the right place to bring my vision to life, and that search led me to Kansas City. That’s how KC Craft Ramen was born.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has been anything but smooth. I didn’t know a single person in Kansas City, and starting from scratch in a place where I had no connections was tough. What was supposed to be a two-month construction project stretched into nine months, and there were plenty of frustrating days along the way. But I was on-site every single day, working alongside the crew to build the shop myself — truly crafting it by hand. Today I have wonderful people who support me, but getting here really was one struggle after another
Appreciate you sharing that. What should we know about KC Craft Ramen?
True to our name, everything at KC Craft Ramen is handcrafted. It’s not just the shop itself that we built with our own hands — we take that same meticulous care with our noodles, broth, chashu, aromatic oil, and even our gyoza, refining every detail down to the smallest element. We’re not just a place to grab a bowl of ramen; our goal is to create a space where guests feel like they’ve taken a short trip to Japan, complete with genuine Japanese-style hospitality (omotenashi). I love connecting with our customers, so we regularly host fun events — pop-up collaborations with ramen shops from Japan, tuna-cutting shows, and other experiences that bring the community together
What has been the most important lesson you’ve learned along your journey?
Running a restaurant is hard work, but the customers here in Kansas City are incredibly kind, and that’s what makes running this business so genuinely enjoyable. I never imagined a restaurant could build such a strong bond with its customers — people who show up to every single pop-up event just to say hello, or who bring me souvenirs after their own trips to Japan. At this point, I truly feel like our customers are extended family. If there’s one lesson I’ve learned along the way, it’s the importance of continually taking on new challenges every day and never being afraid to keep evolving.
