We began our journey driven by a deep passion for the artisanal production of Michoacán-style ice cream. In 2004, my wife and our two daughters took the courageous step of opening our first shop on the Westside, a community that warmly welcomed us, for which we are immensely grateful.
The beginnings presented their own challenges, but thanks to unwavering dedication, discipline, and a commitment to innovation, we won the hearts of our customers. Every flavor, color, texture, and creaminess we crafted became a cherished experience for our clientele, showcasing the art and craftsmanship behind every scoop.
As we prospered, we expanded to several locations, including Kansas City and Wichita, learning invaluable lessons about resilience and adaptability along the way. These experiences not only strengthened our business but also deepened our connection with the communities we serve.
Today, we are proud to lead a thriving business that embodies our passion for quality and excellence. We look forward to the exciting opportunities ahead and remain committed to providing the best ice cream experience for our customers.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
The journey has never been easy. Along the way, we faced numerous adversities that tested our resolve. There were times when we felt like giving up, but there was always an inner voice encouraging us to persevere, reminding us that these difficulties were just the beginning. Today, we often reflect on those experiences with a smile, fully aware that they shaped our path and made our successes all the more rewarding.

Our Team: I’m José Luis Valdez, co-founder and CEO. My journey in this industry began at just 7 years old, selling paletas on the streets of Mexico. I honed my skills as a server for six years at Trio, a fine-dining French restaurant in Evanston, Illinois, and then spent another six years as an expediter at TRU, a Forbes Travel Guide-recognized four-star establishment. Joining me in this initiative are Lucía Fonseca, co-founder and COO, and Jennifer Valdez, our general manager. Additionally, Gerardo Hernández oversees overall production at our manufacturing facility, making a significant contribution to our operations and vision.
