For years, my wife and I sat around talking about “what if.” We dreamed of starting our own business, but it wasn’t until the world slowed down during the pandemic that we finally decided to put our conversations into action.

In the spring of 2022, we started crunching the numbers. We knew we wanted to get into the food game, but we needed to stay within our price range. That’s when we found it: a hot dog cart on Facebook Marketplace all the way out in Arkansas. We took a chance, drove down, and brought that cart home to Kansas City.

The Foundation
I’d spent years in food service, so I knew exactly what people were looking for. It’s not rocket science, but it requires heart. I built our brand on three pillars:

Great Food: We tasted every dog out there until we found the one we truly loved. We also wanted our signature dog to have a Kansas City flare. We came up with the Kansas City Brisket Dog. A quarter pound beef hot dog topped with 12-hour smoked Kansas City brisket. That became our best seller.

Going Viral at Swope Park

By the Fall of 2025, we officially graduated. We added a full food trailer to the fleet, and today, we run both the trailer and the original cart simultaneously.

In the food truck world, if you aren’t mobile, you aren’t making money. You have to be ready to pivot and fix things with a wrench in one hand and a pair of tongs in the other.

Running this business has been the hardest thing we’ve ever done, but seeing the city show us love makes every broken generator and late-night tax session worth it.
