Today we’d like to introduce you to Ashlee Araujo.

Ashlee, we appreciate you taking the time to share your story with us today. Where does your story begin?
Carmen’s cocina started back in March of 2012 by my parents Judy and Luis Araujo. They were recently called to ministry to plant a church in north west Indiana. My sister Carlee and I, Ashlee decided to keep our family restaurant up and going. Carmen’s is a small local restaurant that serves authentic Mexican food and it’s honestly what my mom always fed us at home until we opened Carmen’s. We have unique hours as in we are a breakfast and lunch place because my dad never wanted to lose focus of family time. He wanted to be able to attend school activities but also pick us up from school as all 4 of us were in school when they opened. As I mentioned there are 4 kids total and we all at one point worked at Carmen’s in the family business but two of the siblings are now pursing there calling and are living in Washington!

We all face challenges, but looking back would you describe it as a relatively smooth road?
The Lord has really blessed our family through Carmen’s. I think currently with inflation it hasn’t been the easiest but still God never fails us!

Carmen’s cocina II is a small local restaurant in south olathe who loves the community and loves to serve authentic Mexican food to those around us. We make all our stuff in house salsas, taco shells, meats are freshly cut all the things. We love meeting our customers and making them feel like family.
