Meet Gisela Rodriguez of Kansas City MO

Today we’d like to introduce you to Gisela Rodriguez.

Hi Gisela, please kick things off for us with an introduction to yourself and your story.
In March 2020, I lost my job because of Covid. Making energy bites was already a hobby for me so I decided to start selling them to friends and family. The goal was always to offer an energy bite that was gluten, and dairy-free. The ingredients also needed to be non gmo, free of sulfites and no preservatives. Having all dry ingredients was also a must. (every flavor has ten ingredients) That would make the bites that much more convenient. Very quickly, I realized people were loving them. I remember my boyfriend encouraging me to entertain the idea of turning it into a business but it was too scary for me. A couple of weeks later, I was delivering to a good friend of mine and she suggested I start an Instagram page for the bites. I had no idea what I would even call the business. My intention was to only have the one “Original” bite…….. That also quickly changed. I added three other flavors before I launched the Instagram page on May 15th, 2020. Including the Banana Walnut, Espresso, and Mint Chocolate bites. I ended up choosing The Classic Bite as the business name. From there, it was word of mouth and making sales through my website. I was offering free delivery every day of the week at this point. About two months in, a manager of a local coffee shop reached out to me to talk about a storefront. That’s when I realized I had created something that would become bigger than a temporary side gig. I took the next step and began selling them there. Six months later, I was offered a position managing a donut shop. How ironic. Haha. The complete opposite of what I was promoting. It ended up turning into another storefront for The Classic Bite. It’s been a little over a year now. Still just me. Delivering for free Tuesday-Thursday every week. Doing more pop-ups and catering/events. In the recent months added two new flavors, Brownie and PB Chocolate Chip. Excited to continue to grow!

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Honestly, very smooth road. It can be overwhelming at times with it just being myself. But for the most part everyone has been super supportive. Maybe a hard part is choosing the flavors. Lots of trial and error.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I am the Manager at Duck Donuts in Leawood! I have been doing that since October 2020. I’ve been in the food in beverage industry for 0ver 10 years and love it! I thrive in fast-paced industries.

I was also a fitness instructor for a studio downtown for a year and now I mainly focus on corporate private classes. Staying active and promoting health and movement is super important to me.

How do you think about luck?
I don’t believe in luck. As a believer in Jesus, I know that it has been His hand on this business. Encouraging me and showing me the way. The Classic Bite is something I could have never done on my own. A true blessing. This will always be something I do for Him and not myself. So I will continue to trust and see where this all goes! 🙂

Also, meeting new friends/customers is so much fun!
