Daily Inspiration: Meet Corey Schelp

Today we’d like to introduce you to Corey Schelp.

Hi Corey, thanks for joining us today. We’d love for you to start by introducing yourself.
My wife and I have been in the service industry for 15+ years. We had always talked about starting our own restaurant but funding for that was a little out of our reach at the time. That’s when we decided that our stepping stone to full-service restaurant would be a food truck – we could be our own boss, set our hours and be as creative as we want. It was very grassroots growth in the beginning – walking into businesses with our menu, phone calls and emails, setting up anywhere and everywhere that we were allowed. It was hard but so worth it. And now, five years later, we have had the opportunity to meet and work with some of the most awesome people and businesses in the metro. We have been recognized as one of the top food trucks in Kansas City. Our business is as busy as ever and growing. It’s all been such an amazing, challenging, insane experience and we couldn’t be more excited for our future!

We all face challenges, but looking back would you describe it as a relatively smooth road?
Not quite! Haha. Licensing was the most tricky thing in the beginning. Food truck laws didn’t really exist in most cities and so figuring out the rules and what we needed to just exist and serve was definitely a challenge. Then there are just the struggles of small business life, juggling home life with the kids and staying busy enough to pay the bills and grow. Then the pandemic hit and we weren’t totally sure we would survive it. But we had teamed up with the amazing owners of Red Crow Brewing Co in Olathe, and somehow we weathered that storm together. We did anything and everything we could think of to keep our customer base and in the end, we are stronger for it. Our biggest “challenge” now is that we are so busy! Lol. Not a bad problem to have!

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
We are a husband and wife owned food truck business. We have one truck permanently stationed at Red Crow Brewing in Olathe, opened six days a week for lunch and dinner. We also have a mobile event truck, servicing weddings, grad parties, corporate events and everything in between. We are definitely known for our tacos, but we offer tons more! We feel like what sets us apart is our dedication to being a scratch-made kitchen. We make all of our own marinades and sauces, we cut, chop, roast, season, cook and prepare everything ourselves with all of the love we possibly can. We hope our guests can taste it!

As far as support, coming out to our business is definitely the biggest thing but sharing our posts on social media, commenting, referring us to friends and family, etc. are all great ways too.
