Hidden Gems: Meet Brianna Edmond of Sweet Dreams Bakery KC

Today we’d like to introduce you to Brianna Edmond.

Hi Brianna, thanks for joining us today. We’d love for you to start by introducing yourself.
Growing up, I was a little (okay, a lot) obsessed with my easy-bake oven, so I’d try to sneak in the middle of the night to use it. I would always go into the kitchen and start mixing flour and water, thinking I was doing something when making a mess and getting caught by my parents, who hated that I would waste so much flour.

Fast forward years later, I would always make cupcakes or a little box cake here and there just because I made her cake for my daughter’s 3rd, maybe 4th birthday—a pink ombré rosette cake with a store-bought cake mix and frosting. I must admit it was a little wonky, but everyone, especially her, loved it and that’s all that mattered. Getting the reactions that I did on her cake made me, hmm? I could do this.

I continued practicing with store-bought cake mixes. Then I researched different vanilla cake recipes to experiment with the most basic yet delicious flavor and go from there. I always have my family and co-workers trying the things I make and requesting honest feedback because I knew if I started selling things, I wanted to put out everything well and save someone’s event/special day.

My boyfriend and daughters are incredibly supportive of anything I want to do. He had business cards made for me and would pass them out since I was a tad bit shy and scared at the thought that I would be starting my own business. My first order was from my old apartment complex management office. They ordered a dozen cupcakes with a variety of flavors. I was so excited and nervous at the same time. However, they loved them and told me to promote them in our community group! From there, I have since started taking things seriously and putting more effort into my business.

Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
It has not. With any business comes many obstacles, and you have to be prepared for things to go wrong, mistakes, supply chain issues, etc., something that will happen that will be out of your control, and it’s your job to fix them. I had a lot of mental stress of never being perfect. However, I had to realize neither my business will ever be perfect, and I must do my best. Customers don’t necessarily expect perfection. They see your work and know what you’re capable of; otherwise, they would not have trusted me with something that can usually be the centerpiece of an event. I struggled a lot, starting making things from scratch, burning my cakes, and buttercream frosting would not cooperate. But I continued. I am constantly researching, learning, practicing, and trial and error.

Appreciate you sharing that. What should we know about Sweet Dreams Bakery KC?
I started Sweet Dreams because I’m a huge sweet person! I love to eat baked goods and make them, so it was only right I started a business doing the same. I like creating dreamy, floral, different, fun baked goods! I specialize mainly in cupcakes, but I am practicing my hand at cakes, cookies, muffins, etc. I like creating, not your typical designs. I love using super fun colors just as much as neutrals! Sheet cakes are making a huge comeback (in my humble opinion), and I love how gorgeous and fun they always turn out! Sheet cakes are a huge specialty and hit! When people see my work, I want them to see the details. I want people to notice, “This isn’t your average dozen cupcakes” I’m proud to bring such creativity to the Midwest and hope to expand more regionally.

Any big plans?
Though I am in the process of obtaining a degree in civil engineering, baking will always have my heart, and I don’t see myself stopping anytime soon. Down the road, I would like to buy a large shed to put in the backyard and convert it into my baking space since the kitchen has become a little chaotic. I want more room to freely do what I want and practice more techniques/designs to expand how Envisioned the bakery in my dreams, (hence sweet dreams 😉)
