Today we’d like to introduce you to Kelly Bianchi.
Hi Kelly, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
My husband, Josh, and I met while working as chefs in Las Vegas. After our marriage, we relocated to Manhattan, New York, and later to my hometown of Kansas City. Driven by our ambition to work with the finest chefs and restaurants in the United States, we returned to Las Vegas, where we found greater opportunities for professional growth and development. Over the past 20 years, we have had the privilege of training and collaborating with renowned chefs, restaurateurs, and hospitality leaders, including Tom Colicchio, Wolfgang Puck, Sirio Maccioni of Le Cirque, Marc Vetri, and Steve Wynn, among others. Two years ago, we made the decision to return to Kansas City to be closer to family and to establish our own restaurant, Osteria Bianchi
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
The hospitality industry is inherently challenging, with few easy paths to success. It demands a deep passion and the ability to thrive in high-pressure, demanding environments. Both Josh and I faced moments of hesitation when considering high-profile roles that we knew would place significant demands on us and our family. However, being married to a fellow chef has fostered a profound sense of mutual understanding, compassion, and unwavering support, enabling us to navigate these challenges together.
Alright, so let’s switch gears a bit and talk business. What should we know?
Our mission is to exceed our guests expectations and provide warm hospitality leaving them eager to return. Located in Kansas City near Liberty we are proud be one of few entrepreneurs offering a high quality dining experience to the northland.
Our menu is small but focused offering dishes that are deeply rooted in classic regional Italian cuisine. While we love American Italian dishes we also enjoy and take pride in offering a deeper look by going beyond the traditional red sauce Italian.
Our commitment is to care deeply for our guests, staff, and craft. We take pride in delivering exceptional service and empowering our team with the resources and freedom to create unforgettable dining experiences.
Are there any important lessons you’ve learned that you can share with us?
Only people make people happy.
The most important thing in a restaurant are the employees that decide to walk through the doors. Taking care of our staff, hiring the right people and empowering them to create amazing experiences is the most important lesson.
