Exploring Life & Business with Allyssa Foster of The Pretzelly Truck

Today we’d like to introduce you to Allyssa Foster.

Hi Allyssa, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
The idea for The Pretzelly Truck was born in September 2022, all because I had a craving for a real, handmade soft pretzel. But living in the middle of nowhere meant there were zero options nearby. So, armed with nothing but a memory from a high school baking class, I gave it a shot and tried to make my own. That first batch? Completely inedible. But something sparked.

Within a week, I had bought a trailer and started sketching out a vision. My partner and I spent the fall and winter of 2022 hand-building that pink trailer from the ground up. Meanwhile, I went into full mad scientist mode testing over 80 pretzel recipes in pursuit of the perfect one. Batch number 84 hit the jackpot: soft and fluffy on the inside, with that golden, slightly chewy Bavarian-style crust. It was everything I’d been dreaming of and more.

We hit the road in our original pink trailer for two amazing years. But eventually, I got that familiar itch to grow. I wanted something better. Something cuter. Something… drivable. So the search began for a new vehicle that could become the next evolution of my dream. After looking at more than 15 options, I finally found it: an old ambulance. It was quirky, full of potential, and ready to be transformed. We began renovations in October 2024.

By March 2025, the truck was wrapped, the vision was real, and The Pretzelly Truck had officially leveled up. It was the perfect pink food truck complete with a new logo, refined branding, and packaging that matched our personality: bold, fun, and totally unique. Then in May 2025, we went viral on TikTok, racking up over 4.5 million views. That moment completely changed the trajectory of our third year in business.

What started as a simple mission, to bring soft pretzels to places other than just the mall, has grown into something far more meaningful. We’ve built a community. I’ve made real friendships, formed unexpected connections, and somehow, I’ve even become a “roll model” (pun fully intended) for young women.

At its heart, The Pretzelly Truck is still about one thing: making the best dang pretzel you’ll ever eat. But it’s also about creating joy, confidence, and pink sparkly moments wherever we go.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Hahahah — absolutely not.

Our first year was a mess in the most character-building way. I had no real direction besides: I’m a pink pretzel truck. I wanted to be different, so we launched with pretzel nuggets instead of traditional pretzels. They were definitely unique… but they just didn’t land the way I’d hoped. That year was full of chaotic moments — like the time my husband forgot to install a critical part on the trailer brakes and one of the wheels completely stopped turning while I was driving. Or when I hit a pole during our fire inspection and ripped a fin clean off the trailer.

Year two went more smoothly. We booked more events, learned how to run more efficiently, and started gaining some recognition. But there was still so much room to grow.

Now in year three, we’ve finally hit our stride — stronger branding, a better setup, and a clearer vision. But of course, new challenges still pop up — like dealing with our first “copycats,” which only emphasized how important it is to protect and lean into our uniqueness.

Looking back, every one of those setbacks taught us something. In the moment, they were awful — stressful, embarrassing, and just plain hard. But each one made us better, stronger, and more confident. Without those hard lessons, we wouldn’t be where we are now.

Alright, so let’s switch gears a bit and talk business. What should we know?
The Pretzelly Truck serves handcrafted soft pretzels made from scratch — featuring an American-inspired dough with a Bavarian-style crust for the perfect balance of soft, fluffy insides and a golden, chewy exterior.

We’ve got all the classics: Salted, Cinnamon Sugar, Garlic Parmesan, and Everything Seasoning — each served with your choice of dip.

Feeling adventurous? Try one of our signature sweet flavors like Strawberry Cheesecake, S’mores, Churro, or Cookies ‘n Cream. We’re all about fun, flavor, and pretzels that are anything but ordinary.

And when you come out to find us — trust us, you’ll know you’ve found us. Everything is pink. The truck is pink, the boxes are pink, I wear all pink, and even the butter brushes, tongs, and oven mitts are pink. It’s a fun, playful experience with heart. Our goal isn’t just to serve great pretzels — it’s to make a meaningful connection with every friend who visits the truck.

Do you have any advice for those looking to network or find a mentor?
Honestly, I think I just love to talk — I try to strike up a conversation with every person I meet. But what might seem like harmless yapping has actually led to some of the best opportunities and friendships in this business. One time, when my husband accidentally messed up our trailer wheel, it was a longtime food truck friend who came to the rescue. That connection saved the day!

Being willing to take the first step — whether it’s introducing yourself to another vendor at an event or DMing someone in the same space online — has been huge for me. Some of my best friends and most helpful mentors have come from just being open and curious.

I also use social media a lot to connect with other women in business. We bounce ideas off each other, vent when needed, and even share trade “secrets.” Surrounding yourself with people who get it makes a big difference — and you never know what conversation will lead to your next big break.
