Hi Amanda, please kick things off for us with an introduction to yourself and your story.
Wake and Bacon KC began in May 2022 as a breakfast pop-up at the Independence Uptown Market and local events throughout Kansas City. The business is owned and operated by myself, Amanda Moran True, and my husband, John True. Our passion for food—and the cherished memories of sharing breakfast with our families—led us to create Wake and Bacon KC. We love offering our flavorful, quirky take on breakfast and use fresh, locally sourced ingredients like cage-free eggs whenever possible.
Our early menus featured breakfast classics like scrambles, biscuits and gravy, and French toast, all cooked to order on a flat-top griddle. We quickly noticed the rising popularity of breakfast burritos and began crafting our own signature versions, which we also offered as scrambles or quesadillas.
As winter rolled in, pop-up events slowed, and we started exploring new ways to keep our momentum going. When a fellow small business owner asked about carrying our burritos in his shop, we saw an opportunity. The burritos were a hit—and from that single wholesale partnership, our business steadily grew. Today, we proudly supply burritos to 13 locally owned coffee shops and businesses across the KC Metro.
We’ve bootstrapped our growth from day one, fully self-funded, and learned to adapt as we scaled—from refining our kitchen processes to navigating the logistics of wholesale. Through it all, we’ve stayed true to our mission: delivering wholesome, high-quality breakfast that’s perfect for life on the go.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Our experience has been much like that of many small business owners—it’s felt like a rollercoaster in the dark. You don’t always know what’s coming, how long the ride will last, or what the track even looks like. Starting a food business in the wake of a global pandemic came with a lot of uncertainty, and we weren’t sure if the timing was right or how we would weather challenges like the dramatic increase in egg prices—especially with eggs being our most-used ingredient.
We’ve fully bootstrapped the business from the beginning, funding every step ourselves and learning as we go. It hasn’t always been easy, but staying true to our commitment to quality food and service has been our guiding light. Along the way, we’ve learned to pivot, adapt, and seek out resources to help us grow—whether that’s connecting with mentors, attending conferences, taking online classes, or continuously educating ourselves in the food and hospitality industry.

Wake and Bacon KC is a locally owned, wholesale breakfast burrito business serving the Kansas City Metro. We specialize in handmade, small-batch breakfast burritos crafted with quality ingredients and a whole lot of heart. Our burritos are made fresh using real, whole eggs, locally sourced cage-free whenever possible, and a mix of traditional and creative fillings that bring bold flavor to every bite.

Our vision for the future of Wake and Bacon KC is rooted in growth—but with heart. At the same time, it’s important to us that we stay local and remain a staple in the Kansas City community.
We’re looking forward to deepening our relationships with local coffee shops and small businesses, and exploring ways to make our breakfast burritos even more accessible—whether that’s through direct-to-consumer options, catering, or special events.
